A few of my favorite things

Bacon Heaven!

Hey peoples! Summer is finally here and you know what that means: bacon! Actually, for me, every season means bacon, but I especially love it in the summer on a nice cobb salad or sprinkled on scrambled eggs, au gratin potatoes or festive tacos. It’s like the little (or not so little) black dress you can wear anywhere that never lets you down. Except, unlike the dress, I have been known to dream about bacon and wake up purring!

I’m going to be posting my top ten favorite foods in the next few weeks and inviting readers to send in recipes with them. I promise to read each and every one and will post my favorite and, hopefully, one that all of you will want to try. Please comment on them and let me know what you think so i can keep improving the blog for my fellow foodies.

Please send all recipes to betsyscandy@gmail.com

Ok, bacon lovers, show me whachu got!! I’m so ready to learn more ways to get the bacon that’s outside of my body INSIDE! To hell with bikini season, let’s live a little and embrace god’s crispy gift to the world!

Life is too short to eat turkey sausage! Lol!

Cupcake love affair!

Cupcake heaven!

I’m sorry, I know those are big words to put in front of cupcake, but I wouldn’t be truthful if I didn’t tell it like it is. I simply have had, since childhood, a long passionate amore with cupcakes. So many people just walk by the bakery and feel nothing, but not Betsy Baxter! These little faces of icing cuteness call to me. Those lions and bears look at me with their big chocolate eyes and say “remember us, old friend?” and I reply “yes, my sweet little darlings, how could I forget all that we’ve shared?!”

In my times of need, cupcakes have been there – to help me forget bad times, to thrill me with their chocolately goodness, to step up when my prom date cancelled 45 minutes before prom. These little miracles have never failed me. And I, in turn, have never let them down either. If they appear in my sightlines, I will consume them. It’s really that simple. Even if I’m on a diet, even if it’s bikini season and I’m not quite bikini body ready, I will never say no. I can’t! They are the little Richard Burtons to my Liz. The peanut butter to my jelly. The salt to my pepa. It’s a passion that’s greater than I and I don’t question it. It’s not my place to find the answer. This is God’s work and I am merely a player on his stage with a cupcake in each hand. I’d be going against His wishes not to eat them.

I think of all the women who beat themselves up for having one little treat and I eat cupcakes for them too. There’s no need to torture oneself like that. Life is too short and there are too many cupcakes to be eaten. I’m just thinning out the herd to help make room for more and to help keep bakers in business. We’re in a recession, don’t forget.

So go get yourself a big cupcake today and enjoy every bite of it! They are one of life’s little miracles and have taught me so much – to live passionately, to dream, to embrace surprise, to live a large life. I owe them a lot! Next time these little animal faces look up at you and smile, keep your heart open and take a big bite. They’re trying to teach you something and you better be listening with your heart and stomach!!

A D E L E ! !

Listen up, peoples!

I’m so excited for the new Adele album that’s about to drop in a couple weeks!

If you haven’t heard of her, she’s England’s answer to our beloved Kelly Clarkson. This girl has pipes! She’s crazy amazing! And she’s also inspiring because she’s not tiny like Taylor Swift or googly-eyed Miley C. She likes her snacks and isn’t afraid to show it! She’s comfortable just being herself, which is brilliant (as the Brits say) because her self is one talented chick! And she’s only like 22 years old! She was born amazing!

Here’s a clip of her backstage at the Grammy’s. Nice shout out to Spanx. I’m not buying the bit about the interviewer having spanx. That has to be a lie! You don’t need them to go from a size 4 to a 2, you just don’t! (And why is she so tan, too? She looks like a brownie!) Adele prolly rocks them to get from a 14 to a 12 and that’s HER business. She can do whatever she wants because she is so AWE-SO-ME! Check it!!

Bonne Annee 2011, mes petits pamplemousses!

Hey peoples, Happy 2011! I have BIG plans for the this year, starting with a commitment to blog LOTS more than i have been. I’m sorry…I get busy and have so little me time! But that’s all going to change!

I’ve been thinking about ways to live better, live my “fullest life” as Oprah likes to say. She’s a billionaire and just started her OWN network, so I’m going to do whatever she says. It’s that simple. Here are just some of my resolutions for 2011. Feel free to use them as your own, or add new ones in the comments section. This is a year for all of us to grow, start anew, be brave and expand our horizons, but not our waistlines! Lol!

1. Eat MORE dark chocolate and LESS milk chocolate. Apparently dark is better for you!

2. Walk 30 minutes 3 times/week. I asked my doctor if walking around the grocery store counts and he said “maybe.” I’m going to say it does. Just get moving, people!

3. Learn to like lettuce. And all her sisters: watercress, spinach, frisee, mesclun (I always find a bug or two in those mesclun mixes from the grocery…gross, but not really a justification to NEVER eat greens.)

4. Be more friendly with strangers, especially guys. I know I tend to get all nervous around cute boys, but I’m REALLY going to make the effort to stay calm and not panic when they get in line behind me at Starbucks or Chipotle. That way, a conversation can start and before I even realize what’s happening, I’ll be vacationing with him in Paris, eating eclairs and baguettes and wheels of brie and kissing in the park like French people do! I’ll be dressed like Audrey Hepburn in a turtleneck, skirt and ballet flats and he’ll be in a leather jacket and jeans and be all up in my grill every time I say anything because he doesn’t want to miss a word…we’re that in LOVE! Then we’ll play boule and plan our wedding and the rest will be history…just because I was open to adventure while waiting to get coffee in midtown! amazing!

5. Write more poetry

6. Be open to new experiences. We all tend to get stuck in our rut and grow hesitant to branch out. Well, ladies (and gents!) this is the year to step into the unknown and take BIG chances! I’m going to do all sorts of things I’ve never done before! Whether that’s eating fried chicken feet in chinois town or going bungee jumping or wearing a bikini without shame, I promise to try it! No fear for this diva in 2011! Mama’s gonna power through to glory!!!

7. Teach Brulee to dance. Some of you know about my sweet little Brubru, the world’s cutest pomeranian. He’s my prince among frogs and greets me every morning with a little peck on the cheek. I read somewhere that these dogs can learn dance moves if you teach them well. At least that’s what Cesar Milan, the dog whisperer, claims. His book is going to help me tango with Brubies! I already have the mini tux for him…now I need a red dress for moiself! (that’s French for MYself….a girl has to practice for her lover’s trip to Paris! lmao!

So there you have it…my plan for 2011! Keep watch on me, my awesome readers, and if it looks like i’m not sticking to these resolutions, write in and verbally kick me in the bum. I need your help and I’m here to help you too! It’s all about an open heart in 2011 and HUGE adventures that make our lives AMAZING!

Namaste, mes amis, namaste.

Cutting back

Hey everyone, this is just a little post to say that I just had my last lunch before my diet begins.  I know, it’s only 11:27am, but I get up pretty early and get hungry way before noon.  I’m going on vacation at the end of August and it was decision time: do I want to waddle around the beach feeling all self-conscious about my pale big body or do I want to be a mean, lean, fighting machine who breaks the boys’ hearts?  I chose heartbreaker!  Look out, Rehoboth beachgoers!  Sassy Baxter’s coming to town and taking names!

The last lunch was great.  I wanted it to be a celebration of tasty, rich goodness.  After this, it’s all salads and grilled fish and chicken.  Lean proteins, as they say.  That’s why I had to sneak in that meatball sub before the deadline.  Did I already mention how luscious it was?  I had them add extra cheese AND sauce.  Ok, and an extra meatball.  They know me so they said ok.

Hello new thin body!  Can’t wait to meet you…one day.  One day SOON!  I can already feel my life’s about to change!  SO exciting!!!

FeELiNg SpiNNy!

Way too many Coronas tonight, peoples, way too many Mexican hops and barley and limes! But it was totally fun and worth it. At least right now. In the morning, I might be hurtin’ and needin’ a grande coollata with shots of everything in it? chocolate? yes, please! caramel? bring it to mama! cinnamon/white icing swirl? that doesn’t make a lot of sense, but throw it in there! prime rib puree? well, if i’m still tipsy in the morning, far be it from me to ignore my iron deficiency!

woooah! I feel like I can fly, but i’m going to foce myself to sleep now. I guess the last thing to do is thank Mexico and the Mexican people for making a robust brew! Gracios, amigos! I lie-k to leeve in Amereeka too! Ole shantay!

TGIF!!!

The workday is almost over, mes amis (amies?) and that means that it’s WEEKEND FUN TIME!!

What’s everyone doing this weekend?  I think I’m going to go see SALT with Angelina, better known as “The Woman Who Stole My Husband!”  I read it’s action packed and she’s AWEsome, as usual, even if i’m still angry at her for getting to Brad first and for stealing him from Jen Aniston, who seems like the nicest person ever.  Poor Jen.  I think she’s been a bit lost since then.  But back to SALT!  If anyone’s already seen it, don’t text me about it until AFTER I’ve seen it.  I get so bummed when that happens!

I think I also might try to make homemade guacamole!  I’ve had a hankering for some salty chipskis and that smooth green magic!  I know a lot of people hate cilantro (“tastes like soap!” lol) but i think it’s what makes guacamole SING!  I’ll let you know my recipe next week!  Can’t have a summer party without chips and dip, right?  Hello?  Oh, everyone’s already at the beach and not reading my post?  Ok, cool.  Celebrate good times, COME ON!   I love that song.

Shake it!

Fo’ shizzle!

Peoples,

It’s supersteamy in NYC today, so I thought I’d share a few tips on keeping cool (“cool” in terms of temperature, not “cool” in terms of “omg, i love your phat new jeans, where did you get them?!!”)

1.  I know I talk about this a lot, but I’m a big fan of lemonade.  Sweet, tart, icey goodness!  You can even make it yourself with one or two lemons, three tablespoons of sugar, lots of ice and a few mint leaves, to add color and sass!  Toss those in a glass and STIR!  Voila!   You’ve just boarded the SS Refreshment!  Hollah!

2.  As a few of you know, my life took a turn for the better when a Coldstone Creamery moved in down the block.  How had I survived 2.5 decades without this place?!  Sometimes, on really hot days (like today!) I envision myself as the ice cream, being smeared out on those icey marble slabs!  Throw some fixin’s on me (skor bar, crushed oreos, hell, why not some sprinkles for color!) and I’m in HEAVEN!  Really, peoples, just go into that place and order ANYTHING.  You’ll cool off in a hot second!

3.  Normally, I only have coffee in the form of coffee ice cream, but because I already covered our icey friend above, I’m going to suggest a simple iced coffee at Starbucks.  you can add chocolate syrup or anything you like to it, but sometimes it’s nice to take a break from sweet things (esp if you’re having a muffin with it!  lol!) and just drink some straight coffee.  We all have to have moments of healthiness, right?  Hello?  Anyone?  Ha!  I know!  Add some friggin sugar!  This tastes like crap!  lol!  It can also help to carry Hershey’s syrup in your purse, just a small one, but keep it in a ziplock!  Learned that lesson the hard way!  lol!

4.  A few years ago, when I was a counselor at summer camp, one of the asian campers gave me a beautiful fan from her home country which was either China or North Korea, or maybe India?  At any rate, you wouldn’t think a little fan could make a big difference, but you’d be wrong.  Little noir, as I call it, has helped me so many times, I can’t tell you!  Go to Chinatown, everyone, and get yourself one!  Then write and tell me how much it’s helping you beat the heat!  Ole!  It’s like Epcot Center on the blog today!  lol!

That’s all the tips for now…more to come soon!   Like recipes for popsicles!  Awesomes!!

Hershey’s!

Hey everyone!

This is just a quick pre-bed post to say I overdid the chocolate intake this evening. I didn’t mean to, but it had been a while since I had Hersheys chocolate…and I guess I forgot how crazy good it is! Creamy, dark deliciousness!!

So my promise to myself to eat only an inch or two of the bar went right out the window. Tonight my advice to you is not to do that. Try to stop at half of the king-sized bar. Otherwise, you’ll have a tummyache like mine. Ouchies!

(Still, it was kinda worth it…a girl needs her shoc-O-la, right?!!)

With so much caffeine, I wonder if I’ll be able to sleep. Might have to watch Bridget Jones again…not that that’s a problem for me. Best movie EVER! Bridge would totally understand my chocobinge. Hollah to my sistah B! LOL.

Sweet dreams from the Candyshop!
xoxo
