Hey peoples, Happy 2011! I have BIG plans for the this year, starting with a commitment to blog LOTS more than i have been. I’m sorry…I get busy and have so little me time! But that’s all going to change!

I’ve been thinking about ways to live better, live my “fullest life” as Oprah likes to say. She’s a billionaire and just started her OWN network, so I’m going to do whatever she says. It’s that simple. Here are just some of my resolutions for 2011. Feel free to use them as your own, or add new ones in the comments section. This is a year for all of us to grow, start anew, be brave and expand our horizons, but not our waistlines! Lol!

1. Eat MORE dark chocolate and LESS milk chocolate. Apparently dark is better for you!

2. Walk 30 minutes 3 times/week. I asked my doctor if walking around the grocery store counts and he said “maybe.” I’m going to say it does. Just get moving, people!

3. Learn to like lettuce. And all her sisters: watercress, spinach, frisee, mesclun (I always find a bug or two in those mesclun mixes from the grocery…gross, but not really a justification to NEVER eat greens.)

4. Be more friendly with strangers, especially guys. I know I tend to get all nervous around cute boys, but I’m REALLY going to make the effort to stay calm and not panic when they get in line behind me at Starbucks or Chipotle. That way, a conversation can start and before I even realize what’s happening, I’ll be vacationing with him in Paris, eating eclairs and baguettes and wheels of brie and kissing in the park like French people do! I’ll be dressed like Audrey Hepburn in a turtleneck, skirt and ballet flats and he’ll be in a leather jacket and jeans and be all up in my grill every time I say anything because he doesn’t want to miss a word…we’re that in LOVE! Then we’ll play boule and plan our wedding and the rest will be history…just because I was open to adventure while waiting to get coffee in midtown! amazing!

5. Write more poetry

6. Be open to new experiences. We all tend to get stuck in our rut and grow hesitant to branch out. Well, ladies (and gents!) this is the year to step into the unknown and take BIG chances! I’m going to do all sorts of things I’ve never done before! Whether that’s eating fried chicken feet in chinois town or going bungee jumping or wearing a bikini without shame, I promise to try it! No fear for this diva in 2011! Mama’s gonna power through to glory!!!

7. Teach Brulee to dance. Some of you know about my sweet little Brubru, the world’s cutest pomeranian. He’s my prince among frogs and greets me every morning with a little peck on the cheek. I read somewhere that these dogs can learn dance moves if you teach them well. At least that’s what Cesar Milan, the dog whisperer, claims. His book is going to help me tango with Brubies! I already have the mini tux for him…now I need a red dress for moiself! (that’s French for MYself….a girl has to practice for her lover’s trip to Paris! lmao!

So there you have it…my plan for 2011! Keep watch on me, my awesome readers, and if it looks like i’m not sticking to these resolutions, write in and verbally kick me in the bum. I need your help and I’m here to help you too! It’s all about an open heart in 2011 and HUGE adventures that make our lives AMAZING!

Namaste, mes amis, namaste.

    Dear Ms. Baxter,
My name is Mae Wing Woo and I was a student in the sixth grade class from Bronx Gifted & Talented Program that came to visit the Food Network test kitchens where you work. Thank you for showing us your professional environment and some of the “behind the scenes” parts of the shows. It was nice to see a woman working not in the science or technology fields or not working only in home. It was also inspiring to see how happy and smiling you are even though you are a heavy girl. Thank you again. I learned a lot.
    Sincerely,
    Mae Wing Woo

Hi Mae Wing (do you stop at Mae or Mae Wing? SHould i include the Woo too?),

Thank you so much for taking the time to get in touch and visit my blog! It was SO FUN to have you and your classmates stop by the test kitchen. Normally, it’s just a few of us cooking and eating all day, so you can imagine how great it was to have visitors to cook for and eat with!
Stay true to your dreams…women can do anything! Just because you’re Asian doesn’t mean you have to be excellent at math and science. IF you want to be a chef, go for it! And maybe one day, you’ll grow from a skinny duckling to a heavy swan like me! lol I just figure there’s more of me to love! (-; And you can only fight your genes so much. It’s not easy.

      Take care,
      Betsy

Silly bills! You know you’re my favorite neighbor, not only because you love my brownies and apple crumbles and always bring me Sun Chips, but just because you’re an awesome dude. Your posts always crack me up! We are not going to wine country together because you’d be face down drunk on the ground the entire weekend, but we could play ping pong in the basement of our bldg one night when we’re both doing laundry. I’ll make chili if you promise to keep your emissions to a minimum! ha ha B.

Hey Gurl. Slam dunk with your latest post. Your putting it out all over the town Miss Butterball Baxter. Ha! I love DARK chocolate too…OMG. You know what Im sayin… That was something awesome. Remember that night we’d went to Club Cavo with all those Latin dudes in sweaty shirts. Lick! I think you went home cos you felt too heavy to dance after eating that rack of BBQ ribs…Anyway, you might not remember Carl, not white Carl, black Carl.. the really good dancer. Makes me think about that party-size dark choclat Toblerone and you got me! For real girl ! Anyhow, funny how your blog made me think of Black Karl..I’m getting all squirly picturing him lounging on that red sofa. Shit Tony just got back with his friends and he doesn’t want me chatting online all the time. I gotta go for now. Sha girlfri cj;;o hsdlb;lm

    • 8. betsyscandyshop  |  March 31, 2011 at 6:35 pm

Oh Meesh, Tony is such a meanie beanie baby! Everyone should be allowed to eat chocolate, as much as they want, especially at this time of year! Eeeaaster Baaaskets!!!

Let’s go to the movies soon and plow through some milk duds and peanut M&Ms. Then we’ll get totally drunk afterwards so meanface Tony will only smell gin and tonic and not chocolate! Ha! LMAO! What boy doesn’t know ain’t gonna hurt him! Besides, Allure mag said curvy is the new sexy. That’s my new motto now too! Warning: curves ahead! LOL xoxo Bets
